1 cup honey or maple syrup
1 cup water, divided
4 tbsp. grass-fed gelatin
Directions
In a bowl, combine 1/ cup water and 4 tbsp. gelatin. Let the gelatin bloom, absorb and thicken while you prepare the other ingredients.
In a saucepan, combine the honey with the other 1/2 cup of water. Heat over medium heat until it comes to a boil. Remove from heat.
To the bowl of a stand mixer, add the thickened gelatin mixture and begin mixing on low. Pour in the hot honey mixture slowly, while mixing.
Once combined, increase your mixer speed to medium/high and whip the mixture for 7-8 minutes. You want to see the mixture get very fluffy and double in volume.
Spread the mixture into a parchment lined 9x13 baking dish.
Allow the mixture to set at room temp. for 4-5 hours or overnight.
Once the marshmallows are firm, cut into fun shapes or into squares.
