Chile Colorado in the Crockpot

Ingredients

3 ½ lb chuck roast cut into cubes

3 chile ancho

10 New Mexico chiles

1/2 onion

10 cloves garlic

1/2 C of water

Cumin, oregano, beef bouillon, and pepper to taste

3 bay leaves

Directions

Boil chiles, onion, for 15 minutes until tender

Blend above ingredients with about a cup of the water and garlic, cumin, oregano, chicken bouillon seasoning, and pepper

Cut roast into cubes and sear then over with sauce and cook on low for 8 hours.
