Instant Pot Greek Green Beans

Ingredients

2 tablespoons Olive Oil

1 Onion (diced)

2 cups Russet Potatoes (peeled and diced into 1 inch potatoes)

1 ½ cups Tomatoes (diced)

1 teaspoon Sugar Or Other Sweetener Equivalent (optional)

1 teaspoon Kosher Salt

1/2 teaspoon Ground Black Pepper

1/4 cup Water

4 cups green beans (frozen or fresh green beans trimmed and cut into 2-inch pieces)

1/4 cup Chopped Parsley

juice of one lemon

Directions

Place the oil, onions, potatoes, tomatoes, sugar, salt, pepper and water in the Instant Pot and stir.

Add the green beans and stir.

Close the lid and press PRESSURE COOK and cook on HIGH PRESSURE for 4 minutes. Allow pressure to release naturally for 10 minutes and then release all remaining pressure.

Mix in lemon juice and parsley, and serve.
