Rhubarb Brownies

Ingredients

1 c white sugar

1/2 c vegetable oil

2 large eggs

1 tsp vanilla

1/2 c flour

1/3 c cocoa powder

1/2 tsp baking powder

1/2 tsp salt

1 c rhubarb, diced

1/2 c chocolate chips

Directions

Preheat oven to 375. Line an 8x8 inch baking pan with parchment.

In a medium bowl whisk together sugar, oil, eggs, and vanilla.

In a larger bowl whisk together flour, cocoa powder, baking powder & salt.

Stir the wet ingredients into the dry ingredients until combined.

Add the rhubarb ingredients until combined. Add the rhubarb & chocolate chips & mix until combined. It will be thick!

Pour & spread into the prepared pan.

Bake for around 30 minutes until crusty on top. Let cool for 15 minutes before cutting into squares.
