Pepper-Chicken Fettuccini

Ingredients

1/2 pound fettuccini

1/8 cup olive oil

2 boneless skinless chicken breast

1 red pepper, cut into strips

1 yellow pepper, cut into strips

1 green pepper, cut into strips

1 medium onion - chopped

1 cup sliced mushrooms

Spices to taste - Basil, oregano

Grated Parmesan cheese

Salt and pepper

Directions

Prepare fettuccini as package directs

Season chicken with salt and pepper.

In a large skillet, heat oil and cook chicken.

Add peppers, onions and mushrooms and spices. Stir fry.

In pasta bowl, mix fettuccini, chicken and vegetables. If necessary add additional olive oil to coat top with Parmesan cheese.
