Agua de Fresa (Mexican Strawberry Water)

Ingredients

1 pound (450 grams) fresh strawberries

1/2 cup (100 grams) granulated sugar

5 cups (1.15 liters) cold water (divided)

Lime wedges

Fresh mint

Chopped strawberries

Ice

Directions

Hull the strawberries, then cut them into quarters. Place in a large bowl. Toss with 1/2 cup (100 grams) sugar and 1/2 cup (120 milliliters) of the water.

Cover and refrigerate 1-2 hours.

Transfer strawberries to blender and puree until smooth.

Place a large wire sieve over a large bowl and pour in pureed strawberries. Use a spoon to help push liquid through. Discard remaining seeds.

Stir remaining 4 1/2 cups (1 liter) water into the strained strawberries. Adjust sweetness as desired.

Chill in refrigerator until ready to serve.

Immediately before serving, add ice, lime wedges, fresh mint, and/or chopped strawberries if desired.
