Trey’s Tomato and Spinach Pasta

2 cups uncooked Chickpea Penne
3 Tbso olive oil
1 small onion
2 cloves garlic
1 can of diced tomatoes
2 Tbsp tomato paste
3-4 Tbsp Greek yogurt (or cream cheese)
200g, frozen spinach works too)
¼ cup grated Parmesan cheese
1 tsp dried oregano
1 tsp dried basil
1 pinch red pepper flakes
½ tsp salt
½ tsp pepper
1 big handful fresh spinach (1 big handful 3 Add the can of tomatoes. Add the spinach.

Directions
INSTRUCTIONS
1 Fill a large pot with water and bring to a boil. While the water is heating, dice the onion, and grate or chop the garlic. Add the pasta
When the water is boiling. Cook 9-11 min or until al dente. Drain. Do not overcook.
2 Heat the oil in a large pot over medium heat, add the onion and garlic, cook for 5 min or until translucent.
Add the oregano, basil, red pepwer flakes, salt, and pepper. Add the tomato paste and the Greek yogurt. Stir until both are dissolved into the sauce. Add the Parmesan cheese.
© Lower the heat to a simmer. Add the pasta and stir together.
(5 Stir occasionally for 1 min. Taste and adjust the salt and pepper as needed and enjoy.
