Beef & Sweet Potato Chili

I Tbsp Olive Oil
I pound Ground Beef, Bison Or Lamb
I cup Chopped Onions
2 medium Serrano Or Jalapeno Chile, seeded and finely chopped
3 Cloves Garlic, minced
1 28 ounce Fire-Roasted Diced Tomatoes
I cup Beef Broth
3 cups Sweet Potatoes, peeled and cut into 1” cubes
I cup Chopped Red Bell Pepper
2 Tbsp Chili Powder
I tsp Ground Chipotle Chile Pepper
I tsp Salt
½ tsp Black Pepper
Chopped Cilantro For Garnish
Sliced Avocado For Garnish (Optional)
Directions
Directions:
Heat the olive oil in a large pot over medium-high heat.
Add the ground beef, onion, serrano chili, and garlic. Break up beef with wooden spoon and stir frequently for 5 minutes or more until the meet is browned.
Stir in the tomatoes with their juices, beef broth, sweet potato chunks, bell pepper, chili powder, chipotle powder, salt and pepper. Bring to a boil. Reduce the heat to low, cover and simmer, stirring occasionally, until the sweet potato is tender, 25-35 minutes.
Taste & Season with additional salt & pepper, if needed. Serve with cilantro & avocado slices.
