Shortcake Biscuits

3 cups flour
2 1/2 T. sugar
4 1/2 tsp. baking powder
3/4 tsp. cream of tartar
3/4 tsp. salt
1 1/2 sticks butter or margarine (chilled)
3/4 cups milk
1 egg, beaten.
Directions
Mix dry ingredients. Cut in chilled butter that has been cubed to 3/4 cup. Stir in milk and eggs. Mix to form a dough. Knead once or twice. Shape into a 9 inch square and cut 9 three inch biscuits (square ones). Bake at 400 for 15 minutes. Split and fill with berries and cream.
Notes
All the butter need not blend in smoothly. It is to be chunky in the batter.
