Salsa Verde Chicken & Rice

Ingredients

3 lbs Chicken Breast (1,360g raw)

1: 16 oz Jar Salsa Verde (450g)

2: 15 oz Cans Black Beans (drained ≈ 500g total)

1: 15.25 oz Can Corn (240g drained)

2 Bell Peppers (300g)

1 Small Onion (150g)

1 Tbsp Minced Garlic (15g)

2 Tsp Cumin (4g)

2 Tsp Chili Powder (6g)

2 Cups Dry White Rice (≈ 370g dry)

2 Cups Zucchini, chopped (300g)

Directions

1.) Add chicken, salsa verde, beans, corn, veggies, and seasonings to crockpot; cook low 6–7 hrs or high 3–4 hrs.

2.) Add zucchini near the end; cook until tender.

3.) Cook rice; fluff.

4.) Shred chicken, mix well.

5.) Portion rice into 7 containers; top with chicken mixture.
