Cottage Cheese Caesar Dressing + Pizza Wrap

1/2 cup shredded mozzarella cheese
6 pieces pepperoni
3 cups romaine lettuce, chopped
1/2 cup rotisserie chicken, chopped (optional)
1/2 cup garlic croutons (optional)
Cottage Cheese Caesar Dressing (makes 1 1/4 cups, you will have leftovers to enjoy all week)
3/4 cup cottage cheese (@good_culture obvi!)
1/3 cup freshly grated parmesan cheese
1 lemon, juiced
2 cloves garlic
1/2 tb Worcestershire sauce
2 tsp dijon mustard
1/2 tsp kosher salt
1/2 tsp ground black pepper
1/4 cup water, to thin (more as needed)
First, make the dressing. Add all ingredients to a small blender and blend until smooth. Taste and adjust seasonings as desired. Next, preheat oven to 400F. Chop romaine and chicken and add to a bowl along with the croutons, if using. Toss with 2-3 tb of the dressing and set aside. Next, make the wrap. Spread cheese into a small circular round on a parchment lined baking sheet. Add more cheese if you’d like a bigger wrap. Press pepperoni on top. Bake for 15-16 minutes until the edges get crispy and golden. Remove from oven and let sit 1-2 minutes to firm.
