Big Crunch Granola

200g oats
1 Tsp cinnamon
a pinch of salt
1/4 cup (60ml) melted coconut oil
1/4 cup (60g) maple syrup
Any dried extras that bring you joy, including but not limited to:
Desiccated coconut
Coconut flakes
Flaked almonds
Sunflower seeds
Pumpkin seeds
Hemp seed hearts
Pecans (chopped)
Walnuts (chopped)
Cashews (chopped)
Remember, the more dried extras you add, the more you’re likely to need to increase the amount of coconut oil and maple syrup to properly bind the mixture
Directions
Mix oats, cinnamon and salt
Melt coconut oil and mix that and the maple syrup in
Add dried extras by eye
Spread evenly on a baking sheet and pat down FIRMLY (I use the bottom of the mixing bowl); this helps binding and the creation of big chunks
Bake at 160 fan for 18 mins
Let it cool COMPLETELY before breaking into chunks
Store in airtight container
