Chickpea Salad

Ingredients

Dressing

¼ cup olive oil

1/8th tsp salt

3 tbsp lemon juice

Pepper

1 tsp Dijon mustard

2 tsp honey

Salad

1 can chickpeas, rinsed and drained

1 cup diced cucumber

3 tbsp chopped cilantro or parsley

½ cup dried cranberries

½ cup chopped almonds

½ cup diced red onion (optional)

½ cup crumbled feta cheese

Directions

Dice cucumber.

In a bowl add oil, salt, lemon juice, pepper, mustard and honey and blend.

In a larger bowl add chickpeas, cucumber, cilantro, dried cranberries, chopped nuts, red onion and dressing.

Add feta and mix until combined. Enjoy!
