Grinder Dense Bean Salad

Ingredients

2 red peppers

1/4 red onion

1 bunch parsley

1 can chickpeas

1 can white beans

1/2 cup red peppers

1/2 cup banana peppers

1/2 lb salami

1/4 lb provolone

1/2 cup olive oil

1/4 cup red wine vinegar

1 tsp Dijon mustard

1 tsp dried oregano

Directions

1. Dice the red onion, thinly slice the bell peppers and mine parsley. Chop your banana peppers, roasted red peppers, and thinly slice your salami

2. Rinse and drain your beans.

3. Add your beans, onion, peppers, roasted peppers, parsley, and salami to a large bowl

4. Add the vinegar, olive oil, oregano, salt, and dijon to a small bowl and whisk to create the dressing

5. Toss and enjoy! If you eat dairy this is also delicious with mini mozzarella balls.
