Pineapple Coconut Cookies

Ingredients

1/2 cup Coconut Flour

1/4 cup Coconut Oil (melted)

1/8 cup Honey

1/8 cup Brown Sugar

1/4 teaspoon Canilla Extract

1/4 teaspoon Baking Soda

1 1/2 teaspoon pineapple sugar (sugar coating)

1 teaspoon coconut sugar (sugar coating)

Directions

Preheat oven to 350 degrees.

In a medium bowl mix together coconut oil, honey, bown sugar, eggs, and vanilla in a medium sized mizing bowl.

Mix coconut flour, salt, and baking soda in a separate bowl until well combined. It may seem loose at first, but as it sits for a few minutes the dough will begin to hydrate.

Shape dough into 1-inch balls ans coat with the pineapple-coconut sugar mixture.

Bake cookies on a greased baking sheet for 12-14 minutes or until the bottom and edges are golden brown. Let cookies cool on the sheet before trying to remove.

Notes

This recipe uses Bob's Red Mill brand coconut flour. If you use another brand and the dough is too dry, add a splash of milk until you reach a conistency that allows you to form the dough into balls.
