Pinchitos (Shish Kebabs)

Ingredients

• 1 lb loin of pork

• 3-4 lemons cut and squeezed, with the rinds included in the marinade

• 3 T cumin

• 1/4 cup of extra virgin olive oil

• 1/4 cup chopped garlic

• 1/2 t cayenne pepper

• 1 ample pinch of saffron

• salt and pepper

Directions

1. Cube pork into 1" pieces. Salt and pepper and set aside.

2. Mix the marinade ingredients in a large bowl.

3. add the pork pieces to the bowl, mix well, and let sit overnight in the fridge.

4. Soak wooden skewers in water before using.

5. 10 minutes before grilling, skewer the pork pieces. Place directly on hot grill, turning frequently until meat is fully cooked.

6. Remove and serve.
