Smoky Bacon Gnocchi

Ingredients

Ingredients for 1

180g potato gnocchi

25g of Greek yoghurt or lightest cream cheese

1 stock pot melted in 1/4 cup of boiling water

20g of bacon medallions or turkey bacon sliced into small chunks

110g aw chicken breast

Handful spinach

20g of light grated cheese

1/4 cup of stock

2 sundried tomatoes sliced

Tomato purée

1/4 of an onion

Salt/pepper/cajun and smoked paprika

Directions

Slice the chicken, and onion and fry it for 7 minutes with a pinch of salt/pepper/paprika/cajun

Add the milk, 1 tsp of tomato purée, yoghurt, cheese, spinach and stock water. Keep stirring on a medium heat until the liquid condenses.

Add the gnocchi and sundried tomato and mix together

fry the bacon and add on top. Optional: add parsley
