High Protein Chicken Pesto Rice Bake

Ingredients

1 ½ Ibs boneless skinless chicken breast or thighs, cut into bite-size pieces

1 ½ cups uncooked jasmine rice or long-grain white rice

3 cups bone broth

1 cup full-fat cottage cheese

½ cup basil pesto

¾ cup shredded mozzarella

½ cup grated parmesan

2 cups small broccoli florets

1 pint cherry tomatoes, halved

2-3 cloves garlic, minced

3 tsp Italian seasoning

1 tsp salt

1 tsp black pepper

fresh basil + lemon wedges for serving (optional)

Directions

1.Preheat oven to 375°F.

2.Blend the cottage cheese and pesto until smooth and creamy.

3.In the baking dish, combine rice, bone broth, blended cottage cheese $ pesto, broccoli, garlic and seasonings

4.Stir until evenly distributed

5.Fold in chicken and tomatoes

6.Cover tightly with foil and bake 45-50 mins

7.Uncover, add cheese and broil to brown the cheese 3-5 mins

8.Let rest for 5-10 mins and enjoy!
