No-bake Cottage Cheese Brownie Batter Protein Bites

Ingredients

1/2 cup cottage cheese

1/4 cup unsweetened cocoa powder

1/4 cup chocolate protein powder

1 tablespoon honey or maple syrup

1/4 teaspoon vanilla extract

1/4 cup almond flour

2 tablespoons mini chocolate chips (optional)

1/4 cup dark chocolate chips (for the topping)

1 teaspoon coconut oil (for the topping)

Directions

In a medium bowl, combine the cottage cheese, cocoa powder, chocolate protein powder, honey (or maple syrup), and vanilla extract.

Stir the mixture until smooth and fully combined.

Gradually add in the almond flour, mixing until everything is well incorporated.

If desired, fold in the mini chocolate chips for added texture and flavor.

Scoop out tablespoon-sized portions of the mixture and roll them into balls.

Place the protein bites on a plate or baking sheet lined with parchment paper.

In a small microwave-safe bowl, melt the dark chocolate chips and coconut oil together in 20-30 second intervals, stirring in between until smooth.

Once the protein bites are formed, drizzle or dip the melted chocolate over the top of each bite.

Refrigerate the bites for at least 30 minutes to firm up, allowing the chocolate layer to set.
