Red Chile Sauce

Ingredients

15 Guajillo or Cascabel chiles

A couple of ancho chiles

4 or 5 Chile de Arbol

1 onion

6 cloves of garlic

Directions

Prepare the chiles by removing the stems and seeds, leaving the membrane.

Rinse the chiles well.

Dice the onion.

Place the chiles, onion, and garlic into a pot, adding water to cover.

Bring to a low boil and cook for 10-15 minutes.

Remove from heat and allow to cool.

Once cooled put the solids into a blender along with some of the water. Reserve the water.

Blend until smooth. If too thick, add additional water.

Strain through a mesh strainer and use or store.
