Lemon Cream Cheese Bars

1 box(es) lemon cake mix
2 large eggs, room temperature; divided
1/3 cup(s) vegetable oil
8 ounce(s) cream cheese, room temperature
1/4 cup(s) granulated sugar
1 tablespoon(s) lemon juice concentrate
1 dash(es) vanilla extract
Directions
Preheat oven to 350 degrees F. In a bowl mix dry cake mix, 1 egg, and 1/3 cup oil until crumbly.
Reserve 1 cup of mixture. Press the remaining mixture into the bottom of a 9x13 pan. Bake for 15 minutes.
While the crust is baking, beat cream cheese, sugar, lemon juice, remaining egg, and vanilla extract until creamy.
Spread over crust.
Sprinkle reserved crumbs on top.
Bake for 15 more minutes. Do not overbake.
Chill and cut into squares.
