Zucchini Nut Bread (Bev Lang)

Ingredients

3 cups flour

1 1/2 teaspoon cinnamon

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

3 eggs

2 cups sugar

1 cup oil

1 tablespoon vanilla

2 cups shredded zucchini

1/2 cup chopped walnuts (but I use more!)

Directions

Grease and flour 2 8x4x2 inch loaf pans; set aside

In a large mixing bowl combine flour, cinnamon, baking soda, baking powder, and salt.

In another bowl beat together eggs, sugar, oil, and vanilla. Add to dry ingredients and stir just until combined. Fold in zucchini and nuts. Pour batter into loaf pans. Bake in 350 degree oven for 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes on wire rack. Remove from pans and cool completely on wire rack. Wrap and store overnight for better slicing.
