Ingredients

1 pound lean ground turkey

1 Tablespoon avocado oil

2 teaspoons everything seasoning (or seasoning of choice for turkey)

10 large eggs

1 teaspoon salt

1/2 teaspoon pepper

1 teaspoon garlic powder

1/2 teaspoon paprika

8 ounces sliced mushrooms

1 medium red pepper (chopped)

2 cups spinach or kale (chopped)

Directions

  1. Preheat the oven to 425 degrees F (218 C).

  2. Cook the ground turkey in the avocado oil and everything seasoning for about 10 minutes (or until fully cooked) over medium heat.

  1. Meanwhile whisk the eggs with the salt, pepper, garlic, and paprika.

  2. Combine the cooked turkey, mushrooms, red pepper, and spinach or kale in a casserole dish (9×9" works great).

  3. Pour the 10 eggs over the entire casserole dish.

  4. Bake for about 30 minutes (or until eggs are fully cooked).

  5. Let cool slightly and cut into 6 slices.

Serve and enjoy, or save for meal-prep meals throughout the week!
