Steak N Gravy Pasta Skillet

1 yellow onion
2 cloves garlic
8oz diced steak
2-3 tbsp dried thyme
beef stock
mushroom stock
cavatappi pasta
2-3tbsp cream cheese
2-3tbsp sour cream
1/2 cup shredded monterey jack
Directions
step 1
Halve, peel, and thinly slice onion. Peel and finely chop garlic.
Step 2
Heat a drizzle of oil in a large pan over medium-high heat. Pat diced steak dry with paper towels. Add steak to hot pan; season generously with salt and pepper. Cook, stirring occasionally, until browned and cooked through, 3-4 minutes. Transfer to a plate.
Step 3
In pan used to cook steak, heat 2 TBSP butter (4 TBSP butter for 4 servings) and onion over medium heat; cook, stirring occasionally, until browned and softened, 4-6 minutes. Add garlic and half the thyme (we sent more); cook until fragrant, 30-60 seconds more. Season with salt and pepper. Add 2 TBSP flour (4 TBSP for 4); stir to coat.
Step 4
Stir in 2½ cups beef and mushroom stocks combined (5 cups for 4 servings), and pasta; season with salt and pepper. Increase heat to medium high. Bring to a boil, then reduce heat to low and cover with a lid. Cook, stirring occasionally, until pasta is al dente, 9-11 minutes. (If pasta seems dry, add a splash of water.)
Step 5
Stir in steak, cream cheese, and sour cream until smooth and creamy. Taste and season with salt and pepper.
Step 6
Sprinkle pasta mixture with Monterey Jack and cover pan until cheese melts, 1-2 minutes. Serve straight from skillet.
