Crispy Beef Tacos

Yields: 8 tacos
Ingredients:
– 2 tablespoons olive oil
– 1 medium yellow onion, finely diced
– 3 cloves garlic, mashed
– 1 pound ground beef (90/10)
– 3 tablespoons taco seasoning
(or homemade: 1 tbsp cumin, 1 tsp chili powder, 1 tsp garlic powder, 2 tsp oregano, 1 tsp smoked paprika, 1/2 tsp sea salt, 1/2 tsp black pepper)
– 1 (4.5 oz) can chopped green chilis
– 1/2 cup cilantro, chopped
– 1 lime, juiced
– 1 1/2 cups shredded Mexican cheese, divided
– 8 (6-inch) corn tortillas, very soft
– 1 1/2 cups crushed nacho chips
For Serving:
– Guacamole
– Avocado lime crema
Directions
1. Preheat oven to 400°F.
2. Heat a pan over medium heat and add olive oil. Once hot, add onion and garlic. Sauté for 3–4 minutes until softened.
3. Add ground beef, taco seasoning, and green chilis. Use a spoon to break down beef into crumbles and cook until browned.
4. Remove pan from heat. Stir in cilantro, 1 cup shredded cheese, and lime juice. Mix until melted and combined.
5. Soften tortillas by microwaving wrapped in damp paper towels for 1 minute.
6. Fill each tortilla with a scoop of meat mixture and a sprinkle of remaining cheese. Gently fold and close.
7. Place tacos on baking sheet. Bake for 10 minutes, then broil for 2 additional minutes until crispy.
8. Garnish with chopped cilantro, guacamole, or avocado lime crema. Serve.
