Chimichurri Steak & Fries

Recipe:
150g-170g Grass Fed Beef Eye Fillet Steak (or any cut)
Salt & Pepper
250g white potato- chopped into fries
1-1.5 tsp oil
Seasonings of choice (for fries)- I use salt & peri peri seasoning
Homemade Chimichurri (makes 4-5 serves):
Handful of parsley (I use 1/3 of a bunch)
1 small shallot
1 chilli
2 cloves garlic
1 tsp dried oregano
3 tbsp vinegar (I do a mix of red wine and ACV)
18g Olive oil (about a heaped tbsp)
Salt & Pepper to taste
I use more vinegar over olive oil to limit the calories
Directions
Bring the steak out of the fridge an hour before cooking (to bring to room temp) I like to pat it dry with a paper towel and season with just salt on both sides
Make the chimichurri sauce - I like to blitz every ingredient in my mini food processor because I am too lazy to chop, mix all the ingredients well in a bowl and let it sit in the fridge for minimum 30 minutes to really develop the flavour
Peel & cut the potato into fries & rinse the starch of the potato until the water comes clear
Optional (but recommended) soak the fries in cold water with a dash of baking soda and salt for 30 mins-1 hour
Pat dry and add to a bowl with 1/2 tsp olive oil (the less the better trust me on this) and seasonings and mix well
Airfry at 160c for 5 mins then 200c for 12-15 mins shaking half way
While the fries are cooking, heat a pan to medium-high heat, add a dash of olive oil and cook the steak (I do 2 -3 minutes per side, but every steak will differ (Depending on thickness) mine was a little more well done (I prefer it a lil rarer so do 2 mins per side if you like it more medium rare- for thicker steaks do 3-4 mins)
Remove the steak from the pan and let it sit for 5-10 minutes, I also season with pepper at this point.
Cut the steak into thin strips, serve with the fries and chimichurri and enjoyyyy
