Spinach Cottage Cheese Flagels

Ingredients

240 g cottage cheese

140 g all-purpose flour (plus an extra 30 g)

3 tsp baking powder

1/2 tsp salt

1 tbsp olive oil

60 g baby spinach, finely chopped

120 g shredded mozzarella cheese

Egg Wash: 1 egg, lightly beaten

Directions

1. Preheat the oven to 190°C (375°F). Line a large rimmed baking sheet with parchment paper.

2. In a mini food processor, add the cottage cheese and pulse until smooth.

3. In a large bowl, combine the smooth cottage cheese, 140 g of flour, baking powder, salt, olive oil, chopped spinach, and mozzarella. Mix until well combined.

4. Use your hands to form the dough into a thick log, about 15 cm long.

5. Divide the dough into 6 equal pieces. Shape each piece into a flatter circle and poke a hole in the middle with your finger to create the flagel shape.

6. Place the shaped flagels onto the prepared baking sheet and brush the tops with the egg wash.

7. Bake for 22–25 minutes or until golden brown on top.

8. Transfer to a wire rack and let cool completely before serving.
