Protein Pancake Bites

1 cup cottage cheese
2 large eggs
½ cup almond or oat flour
1 tsp vanilla extract
1-2 tbsp honey or maple syrup (adjust per sweetness preference). I made them with <1 tbsp and I couldn’t taste any sweetness other than from the blueberries
1 tsp baking powder
Pinch of salt
½ cup fresh or frozen blueberries
Optional: unflavored protein powder or collagen
Directions
preheat oven to 350°F (175°C) and grease or line a mini muffin tin. If using the air fryer, preheat to 320°F (160°C) and prepare silicone liners.
In a bowl, whisk together cottage cheese, eggs, vanilla, honey/maple syrup until smooth. Add flour, baking powder, and salt and protein powder if using. Stir until combined.
fold in blueberries
Bake for 18-22 minutes until golden and set.
Air Fryer: Cook for 12-15 minutes until firm and lightly browned.
Let them cool slightly before removing from the tin or liners.
