Sweet Chili Dipping Sauce:
1/3 cup sweet chili sauce
1/3 cup apricot or pineapple preserves
1 tablespoon Lemon or lime juice
Combine the ingredients in a small bowl and stir well.
Makes about 8 ounces

Creamy Sweet Chili Dipping Sauce
2 parts mayonnaise to 1 part sweet chilli sauce and if desired, a splash of lime juice.
Mix well. Use on chicken pieces, mozzarella sticks, onion rings, etc.

Hamburger Special Sauce
Equal parts mayonnaise, dijan mustard and barbecue sauce. We like Sweet Baby Rays' Hickory & Brown Sugar.
Mix well. Should pair well with many sandwich options.

Special Sauce for Burgers
4 tsp ketchup
1/4 cup light mayo
4 tsp Dijon
4 tsp sweet relish
2 tsp apple cider vinegar, or white vinegar
1 tsp maple syrup
Combine all ingredients.
Spread on a burger bun for the ultimate burger experience.

Buffalo Sauce:
1/2 cup of cayenne pepper hot sauce, such as Frank’s RedHot
4 tablespoons unsalted butter, melted*
2½ tablespoons honey*
½ teaspoon garlic powder
½ teaspoon paprika
Directions:
In a medium bowl, stir together the hot sauce, melted butter, honey, garlic powder, and paprika. Season to taste.

Sweet And Sour Sauce: (similar to the red sauce that comes with takeout sweet and sour)
3 tbsp of ketchup
4 tbsp of white vinegar (any type of vinegar works)
3½ tbsp of maple syrup
1-1/2 tbsp of soy sauce (or tamari)
4 tbsp of water (or any fruit juice; orange, pineapple)
1 tsp cornstarch (use more or less depending if it’s for stir-fry or dipping)
Mix all ingredients in a sauce pan, then cook over medium heat for about a minute after it starts bubbling. Stirring constantly.
Lower the heat to medium-low and cook another 2 to 3 minutes, stirring constantly, until it reaches your desired consistency.

Quick Tartar Sauce:
2/3 cup mayonnaise
2 teaspoons sweet pickle relish
1 teaspoon yellow mustard
1 teaspoon white vinegar
pinch of salt
Combine all the ingredients in a small dish and stir until combined.

Dipping sauce for fried fish nuggets
1/3 cup of yogurt
1/4 cup of mayonnaise
Juice ½ lemon
½ teaspoon ground coriander
½ teaspoon smoked sweet paprika
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon salt

Dijon cream sauce:
2 tablespoons of unsalted butter
2 cloves of garlic, finely minced or pressed
1 tablespoon of lemon juice
½ cup of heavy whipping cream
1 tablespoon of dijon mustard
2 teaspoons of dried thyme
Kosher salt & freshly ground black pepper, to taste
1–3 tablespoons of water, as needed to thin

Creamy sage sauce:
1 stick unsalted butter (divided)
10 fresh sage leaves (alternate, 1-1/2 TBSP of any mix of chopped sage, chives and basil)
1 cup of heavy cream
1 cup of chicken broth
1 pinch of salt and ground black pepper to taste
In a skillet over medium heat, add the butter and allow it to melt. Add all ingredients; cook until hot, about 2 minutes. Season sauce with salt and black pepper.
