1/4 white onion
1 jalapeño
2 tomatoes
5 cloves garlic
TACOS
Corn tortillas
Queso fresco
Shredded mozzarella
Tajin
Olive oil
DIPS (optional)
Sour cream
Pico de gallo
Guacamole
Directions
FILLING
Dice tomatoes, jalapeños, and onion
Sauté
Add drained pinto beans
Smush
Season with lots of adobo and S+P
SALSA
Cut salsa ingreds in half and roast on 425 F for 20-30 min
Blend
TACOS
Microwave tortillas (if frozen)
Spread filling and add stick of queso. Sprinkle some shredded mozz & tajin (optional)
Fry in a thin layer of olive oil for ~3-4min on each side
Serve with sour cream, pico, and salsa
