Tuscan Chicken Orzo

Ingredients

2 lbs chicken breasts or thighs

1 jar sun-dried tomatoes (use the oil too)

4 cloves garlic, minced

2 cups chicken broth

1 tsp Italian seasoning

Salt + pepper

1 cup dry orzo

1 cup milk or half-and-half

3 big handfuls spinach

½–¾ cup freshly grated parmesan

How to make it:

Directions

Add chicken, sun-dried tomatoes (with oil), garlic, broth, Italian seasoning, salt & pepper to the crockpot.

Cook on low for 4–5 hours, then shred the chicken.

Stir in orzo + milk. Cook 20–30 minutes until the orzo is tender.

Fold in spinach and parmesan until creamy and silky.

That’s it. Cozy, creamy, and so satisfying.
