Directions
Put a large can of good tomatoes into a food processor with a couple glugs of olive oil, some salt, and a clove of garlic. Whiz that up and pour it into a deep sauté pan set over medium heat and let it to come to a
simmer. Slice or tear your mozzarella into pieces. When the sauce is hot, lay the cheese on top of the liquid and slide the pan into a 400°F oven to get melty and fine. Then serve that in the middle of your table as if it were a fondue, alongside some bread and condiments: olives, say, or anchovies, chopped basil, red pepper flakes, grated Parmesan.•. whatever you like. Dip, eat, repeat.
