Cabbage Kielbasa Soup

Ingredients

1 lb Polish Kielbasa, sliced in 1/4” rounds

2 cups onion sliced thinly

4 cups green cabbage shredded

1 tbsp minced garlic

6 cups vegetable stock

2 cups potato, peeled and diced

1 tsp salt

1/2 tsp pepper

Directions

1. Sauté kielbasa in large soup pot over med. heat for 5 min. Remove and set aside.

2. Add onion and cabbage, sauté for 10 minutes stirring occasionally. Add garlic and sauté for 2 minutes, stirring constantly.

3. Add vegetable stock, potatoes, salt and pepper.

4. Bring to boil. Add back sausage and simmer for 20 min.
