GF Cream Biscuits

4 cups (480 g) GF Flour Blend
2 tbsp baking powder
2 tsp salt
3-3¼ cups (720-780 ml) heavy cream
2 tbsp butter, melted (optional)
Directions
Preheat the oven to 425°. Line a baking sheet with parchment paper and set aside.
In a large bowl, whisk together the flour, baking powder, and salt. Slowly pour most of the cream into the dry ingredients and stir, then add a little more, holding back about ½ cup unless the dough is dry. You may or may not need all of the cream, depending on the humidity in your area. It's better, however, to err on the side of more cream than less (wetter dough than drier).
For Cut Biscuits
On a lightly floured surface, gently knead the dough together into a cohesive mass. Pat or roll the dough into a ¾-1 inch thick round. Cut out biscuits with a 2-3 inch round cutter. Transfer them to the parchment-lined baking sheet, about 1 inch apart.
Brush each biscuit with melted butter, if desired. Bake until lightly browned, about 12-16 minutes. Remove from the oven and brush again with any leftover butter. Serve warm or at room temperature.
For Drop Biscuits
We usually 1/2 the recipe. Scoop dough with a large cookie scoop and place on parchment-lined baking sheet, about 1-inch apart. Bake for 12-15 minutes. Remove from oven and brush with butter/topping of choice.
Notes
Cheddar Bay (Drop Biscuits)
Dough: 1C cheddar, 1/2t garlic powder, 1/4-1/2t Old Bay.
Topping: 1/4C butter, 1/2t garlic powder, 1/4t old bay, 1/4t kosher salt, 1/2t parsley flakes (optional)
Garlic Bread (Drop Biscuits) try
Dough: 1C cheddar (or maybe 1/2C parmesean), 3T fresh parsley chopped, 1/2t garlic powder, (pepper to taste?).
Topping: 1/4C butter, 2T minced garlic, 1T fresh parsley (chopped), parmesean?
Breakfast Biscuits/Bombs (Drop Biscuits) try
Make full biscuit recipe. Line muffin tin with biscuit mix, add scrambled egg (2 eggs total), diced ham, diced onions (cooked), cheddar cheese, top with more biscuit dough, bake 400 for 12-15 minutes. Add bacon bits to the dough?
Pizza (Drop Biscuits) try
Dough: 1C cheddar cheese, 1/2t garlic powder, 12 diced pepperoni, 1/2t pizza crust seasoning?
Topping: 1/4C butter, 1/2t garlic powder
Cinnamon Breakfast (Drop Biscuits) try
Dough: 2T sugar, 1t cinnamon.
Topping: 2/3C confectioner's sugar, 1t warm water, 1/4t vanilla.
Lemon Blueberry (Drop Biscuits) try
Dough: 1/2C fresh or frozen blueberries, lemon zest?
Topping: 1/2C confectioners' sugar, 1T lemon juice, 1/2t grated lemon zest
