Key Lime Pie Bars (SUPER YUM)

Crust:
7.2 oz simple mills graham crackers
1/3 cup coconut sugar
6 tbsp grass fed butter
Filling:
2 14 oz cans organic sweetened condensed milk
1/4 cup cream cheese
3/4 cup lime juice
Zest from 3 limes
Icing:
1 cup heavy cream peaked
2 tbsp coconut sugar
1 tsp vanilla extract
Pinch of salt
Extra lime zest to top it
Directions
Get out an 8x8 glass baking dish & set the oven to 350
Grind the graham crackers in a food processor (can do by hand)
Add sugar and melted butter & grind again
Pat evenly in 8x8 dish & cook @ 350 for 10 min
While the crust is in the oven, combine all the filling ingredients together with an electric whisk.
Pour on top of crust & bake for another 10 minutes
Once done, let it cool completely before topping w/ icing & more zest (put it in the fridge… couple of hours is ideal)
Icing:
In an electric mixing bowl (or hand mixer with whisk), whisk heavy cream until stiff peaks form.
Add sugar, vanilla, and salt and combine
Layer it on the cooled key lime and add more zest
Slice & ENJOY
Notes
The more zest the better :)
Best if cooled for a couple of hours
Will be hard to cut so get a strong knife!
Be prepared to want to eat the whole thing
