Keylime Drizzle Cake

Ingredients

For the Cake:

1 cup granulated sugar

1 tablespoon lime zest

½ cup unsalted butter, softened

¼ cup coconut oil, softened

2 large eggs

1 teaspoon vanilla extract

2 tablespoons fresh lime juice

½ cup plain Greek yogurt

1 ½ teaspoons baking powder

½ teaspoon salt

1 ½ cups all-purpose flour

For the Glaze:

1 cup powdered sugar

2 tablespoons fresh lime juice

Directions

Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.

In a large bowl, cream together the granulated sugar and lime zest until fragrant.

Add the softened butter and coconut oil to the sugar mixture and beat until light and fluffy.

Beat in the eggs one at a time, then stir in the vanilla extract and lime juice.

In a separate bowl, whisk together the Greek yogurt, baking powder, and salt.

Gradually add the dry ingredients (flour) to the wet ingredients, alternating with the Greek yogurt mixture, beginning and ending with the flour. Mix until just combined. Be careful not to overmix.

Pour the batter into the prepared baking pan and spread evenly.

Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.

Prepare the glaze: In a small bowl, whisk together the powdered sugar and lime juice until smooth. Add a little more lime juice if the glaze is too thick, or a little more powdered sugar if it's too thin.

Once the cake is completely cool, drizzle the lime glaze evenly over the top.#cake #lime #summer #recipe #baking #desserts
