Ingredients

2-3lb chuck steaks

3 yellow onions (depending on size and meat quantity)

4 cloves garlic, sliced

28oz can of whole tomatoes, hand-crushed, with about 1/8 cup of their liquid

1/4 tsp dried oregano

1tbsp butter

Salt, black pepper (for the meat)

Directions

Sear off chuck steaks in batches, seasoning top side as bottom sears with salt and pepper. (Instant Pot: Saute - HIGH)

Drain off excess fat down to 1-2tbsp. Add onions until aromatic, then add garlic and briefly saute until aromatic. (Instant Pot: Saute - HIGH)

Add tomatoes, stopping to scrape up fond with the tomatoes' moisture. Add oregano and butter.

Cook 45 minutes, then natural pressure release and serve with bread or rice.

Notes

Increase to 3tbsp butter for round steak and can skip fat-skimming step.

11/4: was good without butter and not skimming fat, did not have fat cap. add at least 1tbsp + 1-2 tsp soy sauce + maybe a little ACV next time
