Ingredients

360g Sugar

360g Glucose Syrup

80g Golden Syrup

80g Water

48g Baking Soda

Directions

  1. Combine the first 4 ingredients in a large pan, and boil until the temperature reaches 144 degrees celsius.

  2. Whisk in the Bicarbonate of soda until slightly thickened, aerated and lighter in colour.

  3. Quickly pour into a high sided, greased container and leave to cool at room temperature until completely solid.
