total timeIngredients
– 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
– 1 cup peanut butter, creamy or crunchy
– 1/4 cup soy sauce
– 1 tablespoon honey or brown sugar
– 2 tablespoons lime juice
– 1 tablespoon sesame oil
– 2 cloves garlic, minced
– 1 teaspoon ginger, minced or grated
– 1/2 teaspoon red pepper flakes (optional)
– 1/4 cup water (more if needed)
– 1/4 cup chopped green onions, for garnish
– Fresh cilantro, for garnish
– Steamed rice, for serving
Directions
Making Thai Peanut Chicken is easy when you follow these simple steps:
Cook the Chicken
In a large skillet, heat sesame oil over medium heat. Add the chicken pieces and cook for about 5-7 minutes until cooked through and lightly browned. Remove the chicken from the skillet and set aside.
Prepare the Sauce
In the same skillet, lower the heat. Add peanut butter, soy sauce, honey (or brown sugar), lime juice, garlic, ginger, and red pepper flakes.
Combine Ingredients
Stir the sauce ingredients together until they are well combined and the peanut butter has melted. Gradually add water to reach your desired sauce consistency.
Add Chicken to Sauce
Once the sauce is ready, return the cooked chicken to the skillet. Stir to coat the chicken entirely with the peanut sauce and let it simmer for 3-4 minutes.
Finish and Serve
Remove the skillet from heat. Garnish with chopped green onions and fresh cilantro. Serve hot over steamed rice.
