Hoisin Duck Wrap

Ingredients

Chinese pancakes

"Shredded duck" (Linda McCartney)

Hoisin sauce

Cucumber, thinly sliced

Spring onions, sliced/peeled lengthways

Optional:

Salad leaves

Pink peppercorns

Chilli flakes

Sesame seeds

Coriander leaves

Chinese five spice

Directions

Cook the duck and pancakes according to packet instructions

Serve the duck and pancakes with hoisin sauce, spring onions and cucumber

Pickled cucumber:

Optionally, pickle the cucumber in rice/white wine vinegar and hot water for 10 minutes

For presentation:

Sprinkle pink peppercorns and chilli flakes onto the hoisin sauce

Add sesame seeds to the cucumber

Garnish the plate with coriander and salad leaves

Dust Chinese five spice over it as a finishing touch
