Kick ass Salad

t•\tchicken breasts (3-4)
t•\ttomatoes (1-2)
t•\tsweet potato (1)
t•\tred onion (1/2)
t•\tcorn (1-1 1/2cup)
t•\tblack beans (1/2-1 can)
t•\tkale (4 cups)
t•\tavocado (1)
For the Sweet Potatoes:
t•\tpaprika
t•\tsalt and pepper
avocado oil
For the Chicken:
t•\tchili powder
t•\tpaprika
t•\tgarlic powder
t•\titalian seasoning
t•\tsalt and pepper
Kick-Ass Kate’s Sauce:
Blend together (or use a food processor)
t•\t1 cup Greek yogurt
t•\t1 cup cottage cheese
t•\tJuice of 2 limes
t•\tA generous handful of fresh cilantro
t•\t1/2 tsp paprika
t•\tSalt and pepper to taste
3 or 4 Garlic Cloves
If it’s too thick add some water or olive oil.
Directions
t1.\tRoast the Sweet Potatoes:
t•\tPreheat oven to 400°F (200°C).
t•\tToss diced sweet potatoes with avocado oil, paprika, salt, and pepper.
t•\tSpread them on a baking sheet and roast for about 25-30 minutes, flipping halfway through, until crispy.
t2.\tCook the Chicken:
t•\tSeason chicken breasts with chili powder, paprika, garlic powder, Italian seasoning, salt, and pepper.
t•\tHeat avocado oil in a skillet over medium-high heat.
t•\tCook chicken for about 5-7 minutes per side
t•\tLet rest for a few minutes, then cut them into cubs

t•\tIn a large bowl, add all your ingredients. chopped kale, chicken, roasted sweet potatoes, tomatoes, red onion, corn,black beans, and SAUCE
