Ingredients

•2 large eggs room temp

•110 Gramms melter butter

•1/2 cup coconut sugar

•1 tsp vanilla

•1 tsp cinnamon

•2 cups almond flour

•1/2 cup Corn starch

•1 tsp baking powder

•1/4 tsp salt

•2 cups shredded zucchini (about 2 medium / 1 large - core removed) water squeezed out with paper towels after shredding.

•1 cup chocolate chips

Directions

Preheat oven to 175 Celsius & Line Muffin Pan with silicone molds.

⁃Mix eggs, sugar, butter and vanilla in one bowl

⁃Mix almond flour, corn starch, salt, baking powder and cinnamon in another bowl

⁃Add shredded zucchini to wet ingredients, then add the dry ingredients, then the chocolate chips

⁃Mix and fill muffin cups.

⁃Bake for 22-25 min in lower half of the oven

⁃Let cool thoroughly before taking them out of the silicone liners, so the muffin can set a bit.
