Comforting Smothered Chicken and Rice

Ingredients

4 bone-in chicken thighs

1 cup long grain white rice

1 onion, sliced thin

1 cup sliced mushrooms

2 cups chicken broth

1/2 cup heavy cream

1/4 cup all-purpose flour

1/4 cup vegetable oil

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Fresh parsley (optional)

Directions

Step 1

Season chicken thighs with salt, pepper, garlic powder, and onion powder.

Step 2

Heat oil in a large skillet over medium-high heat. Sear chicken thighs until golden on both sides. Remove and set aside.

Step 3

In the same skillet, add sliced onions and mushrooms. Sauté until softened.

Step 4

Sprinkle flour over the vegetables, stirring for 1–2 minutes.

Step 5

Gradually pour in chicken broth, stirring constantly until the mixture thickens.

Step 6

Stir in heavy cream and return chicken thighs to the skillet. Cover and simmer on low for 30 minutes.

Step 7

While the chicken simmers, cook rice according to package instructions.

Step 8

Serve the smothered chicken over a bed of fluffy rice. Garnish with chopped parsley if desired.
