Spring Roll Salad with a Peanut Dressing

Ingredients

Peanut Sauce:

1/3 cup peanut butter

1 tbsp olive oil

1 tbsp soy sauce

1 tbsp honey

1 tsp rice vinegar

1 tsp sriracha or chilli sauce

2 garlic cloves

1 tsp fresh ginger

1/2 lime, juiced

Water to thin (1-2 tbsp if needed)

Directions

Mix everything in a small bowl or use an immersion blended. Set aside)

Shrimp:

1 lb shrimp, shells removed, pat to dry

1 tbsp olive oil

Salt and pepper

Fry the shrimp on medium heat for 1-2 minutes per side in your olive oil, until pink and cooked through.

Season lightly with salt and pepper.

Additional ingredients:

100 grams cooked and cooled rice noodles

1.5 cups purple cabbage, sliced

2 small carrots, sliced

2 mini cucumbers or half a large one, sliced

1 small jalapeño, sliced

1 avocado, sliced

1/4 cup green onions, chopped

1/4 cup cilantro, chopped

1/4 cup mint, chopped

Peanuts (optional)

Chilli oil (optional)

Assemble, mix & enjoy!
