Mini Cheesecakes

Ingredients

Crust:

1 1/2 cups graham crackers

1/4 cup sugar

1/2 stick melted margarine

Cheesecake:

2–8 ounce packages of cream cheese

3/4 cups of sugar

2 eggs

1 teaspoon vanilla

Topping:

Pie filling or jelly

Directions

Crust:

Crushed the graham crackers and mix with sugar and melted butter. Put 1 teaspoon of crumbs in a mini muffin pan paper liner.

Cheesecake:

Cream together the cream cheese and sugar. Add the eggs and vanilla and beat thoroughly 4 to 5 minutes.

Phil the mini muffin cups to the top with the mixture.

Bake at 350° for 20 minutes.

Do not brown. Top will sink in.

Used canned pie filling to top when serving.

You can freeze.
