Ingredients (makes 6)

160g shredded coconut

80g canned coconut milk

1 tbsp honey

300g frozen raspberries

1 tbsp chia seeds

Time: 3 to 4 hours in freezer

Directions

Slightly heat the frozen strawberries until softened, then mash them and add chia seeds

Blend shredded coconut with the coconut milk and honey

add the coconut base to a muffin tray and top with raspberry purée

Freeze for 3 to 4 hours and enjoy!
