1 small shallot, finely minced
1 garlic clove, minced (optional for extra zing)
2 tablespoons red wine vinegar (or lime juice for a citrusy twist)
1 teaspoon Dijon mustard
1/2 teaspoon honey or maple syrup (just a touch to balance the acidity)
1/4 teaspoon sea salt (more to taste)
Freshly ground black pepper
1/3 cup extra-virgin olive oil
Zest of 1 lime (or lemon)
Optional Add-Ins:
A pinch of chili flakes for heat
A few fresh herbs like cilantro or parsley, finely chopped
Directions
In a small bowl or jar, combine the shallot, vinegar (or lime juice), mustard, honey, salt, pepper, and lime zest.
Let the shallots sit in the mixture for about 5 minutes to mellow out.
Slowly whisk in the olive oil (or shake if using a jar) until emulsified.
Taste and adjust salt, pepper, or sweetness as needed.
To Use:
Drizzle generously over your avocado corn salad just before serving. It complements the creaminess of the avocado and the sweetness of corn beautifully.
