CHEDDAR GARLIC BROCCOLI FRITTERS

Ingredients

4 cups cooked broccoli, (1 L) chopped finely

1/4 cup flour (30 mL)

3 eggs

1 tbsp minced garlic (kind in a jar) (15 mL)

1-1/2 tsp salt (7 mL)

1 tsp dried parsley (5 mL)

1/2 tsp black pepper (2 mL)

2 cups shredded Cheddar cheese (500 mL)

3 tbsp olive oil (45 mL)

Directions

In large bowl combine cooked, soft broccoli (I usually simply cook mine in boiling water and drain in a colander, and then press out as much moisture as possible using a clean tea towel or paper towels) and flour.

In small bowl, beat eggs and stir in garlic, salt, parsley and black pepper. Stir into broccoli mixture and then stir in the Cheddar cheese.

Using an ice cream scoop (1/4 cup; 60 mL), drop mixture in 4 or 5 mounds in a nonstick pan with 1 tbsp of hot oil. Leave any excess liquid behind, just using the solids for the most part. Flatten the fritters with the back of a large spoon or a spatula. Cook fritters over medium heat until golden brown on both sides. Serve.
