Crispy Lemon Pepper Chicken Sandwich

Corn flakes

Butter

Lemon juice

Soy sauce

Salt

Pepper

Honey

Cucumber

Red onion

Olive oil

White vinegar

Red pepper flakes

Sour cream

Directions

Dredge chicken thigh in flour, egg, then crushed corn flakes. Bake until cooked and crispy. Meanwhile, in a pan, add butter, lemon, soy sauce, black pepper, and honey. Heat and stir until thickened and sticky. Pour over chicken while still warm. In a container, add cucumber, red onion, salt, pepper, olive oil, white vinegar, honey, red pepper flakes. Close lid and shake well.

Mix together sour cream and chives and spread on both sides of toasted bread. Add chicken with sauce, then cucumbers on top.
