2 cups cooked, chopped chicken
2 sticks of celery, diced
1 spring onion, finely sliced
1 handful baby spinach/Silverbeet, finely chopped
3 tbs walnuts, chopped (omit if you can’t have nuts at school)
2-3 tbs fresh herbs - parsley and dill work well
2 tbs mayonnaise (I used kewpie)
2 tbs Greek style yoghurt
Juice if 1/2 a lemon
1 tsp Dijon mustard
Salt and pepper
Directions
Mix the mayo, yoghurt, lemon juice, Dijon and salt and pepper together in a small bowl and set aside.
In a large bowl, mix together chicken, celery, herbs, spring onion, spinach and almonds. Mix to combine.
Add the dressing and mix well to combine.
Enjoy as you wish
